The Supplies

Casserole dish
Candy thermometer (or something to get you close to 240
°)
Sifter
Stand Mixer or Electric Mixer

The Process

1. Pour 1/2 cup water in your stand mixer. Sprinkle 3 tablespoons of beef gelatin over the water and allow to soak or "bloom" for 10 minutes.

2. Add 1/2 cup water and 3/4 cup honey to a pot. Boil on medium high heat until mixture reaches 240°, about 15 minutes.

3. While waiting for your honey water to reach 240°, sprinkle 1/2 tablespoon across the bottom of your casserole dish. This will prevent the marshmallows from sticking to the edges!

4. Once your mixture has reached 240°, slowly pour the liquid into your stand mixer over the bloomed gelatin. Mix on high speed for 15 minutes, adding in your marshmallow root powder and vanilla at about the halfway point. Your brown honey mixture will turn white and get fluffy as air incorporates into it... so cool!

5. Once your marshmallow fluff has formed, spread it into your powdered casserole dish, working quickly before the fluff sets! Once smoothed out in your dish, allow to set for 5-7 hours.

6. Sprinkle another 1/2 tablespoon of arrowroot powder over the top of your marshmallows.

7. Lightly grease a knife with coconut oil and cut your marshmallows into your desired shape.

9. Store in an airtight container in your pantry for 7-10 days... if they'll even last that long!!
