2/3 cup light brown sugar 3 tablespoons cocoa powder 3 tablespoons corn starch A pinch of salt 3 egg yolks 3/4 cup heavy cream 2 + 3/4 cups whole milk 1/4 cup butter (I use salted) 2 teaspoons vanilla extract
The Process
1. In a bowl, mix together brown sugar, cocoa powder, and cornstarch, working to press out any lumps.
2. In a separate bowl, mix together egg yolks, milk, and cream.
3. In a saucepan, add the wet ingredients, and then slowly incorporate the dry ingredients. Stir together until you reach a chocolate milk-like consistency.
4. Set the pan over medium heat and continue whisking, making sure to scrape the bottom and sides of the pan. Continue stirring nonstop for about 10 minutes until the chocolate milk starts thickening and bubbling across the surface.
5. Once your pudding has reached a thick and bubbly state, turn your pan down to a simmer and add the vanilla and butter. Continue cooking for about 2 minutes and then remove from heat.
6. Set a fine-mesh strainer over a bowl and carefully pour the pudding in. Stir and fold the pudding to work it through.
7. Place a piece of parchment paper over the pudding, making sure to press it down onto the pudding surface to cover it entirely. 8. Refrigerate until cold (about 4-5 hours)
9. When you're ready to serve it, just take off the parchment paper, give it a stir, and dish it up! So easy and soooo delicious!
10. (Optional) Chop up a few chocolate chips to create chocolate shavings to add as a garnish. We eat with our eyes first! :-)
